At Roskilde Festival and in their home town of Aarhus, Mikuna is notorious for their giant, greasy, 100 % vegan burger. Below, we’ll give you the recipe for making your own Mikuna Burger with pickles, chili jam and breaded onion rings.

INGREDIENTS


Burger buns

  • 4 burger buns

Chili jam

  • ½ dl vinegar
  • 170 g red bell pepper - in roughly chopped
  • 200 g sugar
  • 2 red chilies - sliced

Breaded onion rings

  • 2 large onions – in 1 cm thick slices*
  • 1 dl beer ice-cold
  • 20 ml corn starch
  • 1,5 dl wheat flour
  • 1/2 tsp salt
  • 1/2 tsp smoked paprika
  • 2 dl panko or coarse breadcrumbs
  • ½ l rapeseed oil for deep frying

Pickles

  • 1/4 white cabbage, finely chopped
  • 1 onion, cut in half and cut into thin slices
  • 1 red bell pepper, diced
  • 1/4 cucumber, thinly sliced
  • 2 dl vinegar
  • 1 dl water
  • 100 g sugar
  • 1/2 tsp salt

Serve with

  • 500 g of plant-based mince or plant kebab (g. from LikeMeat)
  • 4 tbsp of plant-based mayonnaise, available at grocery stores
PREPARATION


Form four equally sized patties of the plant-based mince, season with salt and pepper, and fry in oil on a pan with medium heat - 5 minutes on each side. If you use plant kebab, prepare according to instructions on the packaging.

Split the buns and heat in a preheated 180°C oven.

Chili jam
Put all ingredients in a pan and bring to a boil while stirring. Simmer for 40 minutes until it has a consistency like thin jam.

Put the jam in a container with a lid. Allow it to cool on the kitchen table without a lid before refrigerating.

Breaded onion rings
In a bowl, whip beer, corn starch, wheat flour and salt together to a smooth dough. Put panko in another bowl.

Heat the oil in a deep pan.

Turn the onion rings first into the beer dough and then into the panko. Fry a few pieces at a time in the oil until golden and crisp. Let them drip on a paper towel.

* The smallest rings from the center of the onion can be used in your pickles.

Pickles
Mix all vegetables

Bring the vinegar, water, salt and sugar to a boil. Let it cool down a bit and pour it over the vegetables. Mix it all together and allow it to cool before using it.

Serve
Spread plant mayonnaise on bun bottoms. Add hamburger or plant kebab, drained pickles, three crispy onion rings and finally chilli jam on top. Put the bun tops on and serve!
