Not only are they a local volleyball club, they are also famous for making one of Roskilde Festival's best spaghettis. You probably know them as Spaghetti 50 (or maybe 45 or 35) and below you'll find the recipe for making the legendary bolognese for your DIY party.

  • 500 g minced beef
  • 1 tbsp olive oil
  • 2 onions, chopped
  • 250 g celeriac, coarsely grated
  • 250 g carrot, coarsely grated
  • 3 garlic cloves, finely chopped
  • 2 cans chopped tomatoes
  • 1 small can of tomato puree
  • 1 dl white wine
  • 1 tbsp thyme
  • 1 tsp smoked paprika
  • 1 tsp cayenne pepper
  • 1 tsp grated nutmeg
  • Salt and pepper

Serve with

  • 400 g spaghetti
  • Opt. fresh basil and parmesan



Heat the oil in a pan and cook the minced beef until it’s browned. Preferably, divide the meat into four portions so that the meat doesn’t boil in the pan.

Add onion, celeriac, carrot and garlic cloves, and cook for 5 minutes.

When meat and vegetables are sautéed well, add the rest of the ingredients.

Leave it to simmer under cover for 20-25 minutes.

Meanwhile, cook the spaghetti according to the instructions on the package. When the spaghetti is cooked, pour it into the pan with bolognese. Season with salt and pepper and more spice to your liking.

Serve in deep plates with grated parmesan and fresh basil on top.
