Crushed Danish ingrid peas with roasted onions and onion stock. Topped with summer cabbage and pickled onions tossed in chimichurri. Served on toasted rye bread.

Fungi-fermented surplus vegetables and mushrooms tossed in Jerusalem artichoke emulsion with fermented pepper. Topped with pickled fennel and parsley. Served on toasted rye bread.
